Tortilla Soup

This is such a yummy, satisfying soup! Despite being pretty quick to pull together, this recipe should make you feel proud that you're really cooking from scratch with lots of healthy, whole-food, plant-based ingredients. To make this a one-dish clean-up, we recommend purchasing an immersion blender like this one. It makes preparing this recipe so much quicker. Chipotle chilis canned in adobo sauce can be found in the Mexican foods aisle. You can titrate the spiciness to your preference, but be sure to remove all of the chilis before blending. They are hot!

Ingredients

  • 2 Tbsp. olive oil

  • 2 yellow onions, roughly chopped

  • 6 - 8 large ripe tomatos (Cut in halves, plus 1/2 cup diced for garnish)

  • 14oz white mushrooms (cut in halves)

  • 2 large red bell peppers, seeded and roughly chopped

  • 3 cloves garlic, roughly chopped

  • 4 cups vegetable stock

  • 2 Tbsp. ground cumin

  • 2 tsp. smoked paprika

  • 1 tsp chili powder

  • 2 tsp. kosher salt

  • 3/4 tsp chipotle chili powder

  • cilantro 8 sprigs (plus, 1/2 cup chopped for garnish)

  • 2 - 15oz. cans corn, drained

  • 14oz. frozen green peas

  • juice from 3 lemons

  • garnishes: sliced scallions, 2 avocados cubed, fresh diced tomatos, chopped cilantro, tortilla strips or chips, optional: lime wedges

Directions

  1. In a large soup pot or dutch oven, heat oil on medium high heat. Add onions and sautée until softened. Add tomatos, mushrooms, bell peppers, garlic, vegetable stock, cumin, paprika, chili powder, salt, chipotle chili powder, and cilantro sprigs.

  2. Bring to a boil over high heat.

  3. Reduce heat to medium-low, cover and simmer for 30 minutes until the vegetables are tender.

  4. Carefully remove the cilantro springs.

  5. Use an immersion blender to blend until smooth.

  6. Add the lemon juice, corn, and peas and cook for about a minute until the peas are bright green and tender. (Don't overcook or your peas will turn olive-brown.)

  7. Serve garnished with your fresh diced tomatos, cilantro, avocado cubes, scallions, tortilla strips, + / - a lime wedge. Enjoy!
