Golden Glow Soup

This is an easy, one-pot dinner that is both healthy and extremely satisfying. It can be made ahead and makes delicious leftovers for days, although it does thicken up to more of a stew when left over night.

Prep time: 30 min
Cook time: 20 min
Serves: 12
Ingredients:
1 Tbsp olive oil
2 large yellow onions
4-6 carrots, sliced
4 cloves garlic
1 head celery, sliced
2 tsp dried oregano
1 tsp turmeric
1 tsp black pepper
1 tsp kosher salt
12 cups vegetable broth
2 cans white beans, rinsed
zest of 2 lemons
Juice of 3 lemons
3-4 cups fresh kale, chopped
1/3 cup tahini
16 oz. pearled barley dry (pictured here with orzo instead)
1 bunch fresh dill, chopped
1 pkg plant-based sausage sliced (we prefer Tofurky brand)
1.) Heat oil in a large pot on medium heat. Then add onion and sauté until soft (about 5 min), then add carrot, celery, garlic, oregano, turmeric, salt, and pepper. Saute until veggies are soft (about 5 min.)
2.) Add broth, barley, tahini, and bring to a boil, then simmer for 10 minutes.
3.) Add in kale, beans, zest, lemon juice, dill, and sausage and cook until the barley is soft and everything is heated through (~another 10 min), stirring intermittently. Enjoy!
